Chiles Rellenos

So I have been looking all over for a good classic chiles rellenos recipe. The boyfriend and I eat at a place where they make them, and I just wanna make them at home. the recipes that I found have cheeses that the local supermarket have never heard of or are very expensive. I don't even need a whole recipe, however if someone could give me a cheese-list that I could find at my local supermarket that would be awesome. I dont want to use one of those mexican cheese mixes from kraft, but looking for more authentic cheeses.

Any cheese that melts nicely will do for the stuffing. The better the cheese, the better the end result, but a supermarket Monterey Jack or Mozzarella works well. I personally think Monterey Jack works best.
