I bought a pork loin the other day, just wondering what you guys have as far as cooking that?

Yum! We love pork loin here. Any more I usually get the pre-marinated ones. However When I buy the regular ones, I get a great marinade and let it sit over night in it. Then we usually grill it with hickory chips over the charcoal grill. You can just toss them in a dish and bake as well. Pork loins are great, and you really can't mess them up as long as they are cooked. :) You can either buy a marinade, or find a zillion recipes online for one that looks good to you. I personally like a peppercorn marinade. They do have everything from lemon, garlic, ect.
I usually serve along with some grilled asparagus and diced seasoned potatoes. Mmmmm.....Now I am hungry.

I delayed posting because I usually just roast mine with salt, pepper, garlic and onion on it. I also put some veggies in the roasting pan with it. Nothing really exciting. But it's good.

Pork Loin is one of Alan's favorites and I make it quite often. I usually let it marinate for at least 4 hours or so. I actually use a fajita marinade on it and it turns out really yummy (it's just a bottle of fajita marinade....I don't remember what brand right now). And then I put it in a baking dish filled about half way with water and put some salt and pepper, pour a bit more of the marinade all over the pork loin, and then cover it with aluminum foil. Bake for about 1 1/2 -2 hrs depending on how thick it is (we usually get smaller ones) and use a meat thermometer to check that it's cooked all the way. YUM!!!

I actully ended up marinating it in coke, oregno, cavenders seasoning,and garlic

I actually made some last night and it was so good! Here's what I did: First, brown the pork in a pan with a bit of oil, about 5 minutes on each side. Remove from heat and keep warm. In the pan, add 1/2 cup of bbq sauce, sliced red pepper and onions until veggies are tender. Add pork and cover in sauce, cook for about 10 minutes. I served it with roasted potatoes and veggies, oh so good!:bananadance:

oooooo. made some the other day that hubby and i loved but the kids less so (good - more for us).
sprinkled it w/lemon paper spice and pan broiled it in a little oil till browned. then i put it in a pyrex oblong dish with a little bit of soya sauce, orange juice, brown sugar (or honey) and i put in some dried fruit (apricots, raisins, prunes etc and then cooked it till ready (make sure not to overcook which really dries it up.
it was really good.
