My mom used to have a friend who would make this really good tasting treat and I really want to make some but I don't know the recipe. I know that it was : unsalted crackers on the bottom, this peanut brittle-like stuff (didn't have any peanuts) in the middle, and chocolate on the top. If anyone knows what I'm talking about, I'd really appreciate if they could post the recipe,

Rebecca

I think I may, my mother has made something like that before...I am house & step-dog sitting at my mom's house so I'll look for the recipe tonight. She is gone for 3 weeks, so if I can't find right away, I'll wait 'til she comes home.

it sounds like candy bar cookies... lol The bottom is kinda like a sugar cookie but not as much sugar and a finer texture.

lol I would tell you how to make it, but the one my mother makes (I am sure there are many variations) is a family "secret" lol She has not even given it to me!!!! She says when I have children she will.... Grandma is no help either... :(

Here's my Mom's recipe; I'll bet it's similar to those in Surfnsky's post:

Saltine Cookie Bars

1 sleeve saltine crackers
1 stick butter or margarine
1 cup sugar

Place saltine's on a cookie sheet (with sides) (10 x 14)
Melt butter & sugar, boil slightly.
Pour over saltines, bake in preheated oven 350 for 5-10 minutes
Keep a watch on it so they don't brown too much.
When done place a broken 6 oz. hershey bar on top or you can use chocolate chips.
When melted spread over bars and sprinkle chopped nuts on top if desired.
Lightly score while still warm. It makes it easier to cut when cool.
You can put in refrigerator to set up if desired.
Enjoy!!!!

I found it..I guess I must have stolen it from my mom before  It was in MY recipe folder! :slurp: Just a suggestion, I really like nut and if you like nuts too, add them its super good :slurp:

Ingredients:
28 Dare Breton Crackers
1 cup brown sugar, packed
1 cup butter
1 pkg. (12 oz.) semi-sweet chocolate chips
1/3 cup nuts, chopped (optional)

Directions:
Completely line a 13x9-inch baking pan with foil. Arrange a single layer of crackers over bottom of pan. Arrange a second layer ofcrackers to cover spaces between crackers in first layer. (It will be necessary to break some crackers in half so that the entire bottom of pan is covered.) In medium saucepan combine sugar and butter. Cook and stir over medium heat until mixture comes to a boil. Remove from heat; pour evenly over crackers in pan. Bake in 400°F / 200°C oven 5 minutes. Remove from oven; sprinkle with chocolate chips. When chips are soft, spread over top. Sprinkle with nuts(optional). Chill until chocolate is set. Break into pieces to serve. Store in refrigerator, in a sealed container.

Here's something similar...

crust:
1 stick butter
plain bread crumbs (about 1 1/2 cups)

top (all bags are 12oz):
1 bag semi-sweet chocolate chips
1 bag butterscotch chips
1 bag sweetened shredded coconut
1 bag chopped walnuts
1 small can (8oz, I think) sweetened condensed milk

In a 350 degree oven, melt butter in 9x13" pan. Add the crumbs, until all the butter is absorbed, and push down into pan. Bake 5-8 minutes, until set. Top with all the other stuff, pouring the condensed milk over everything last. Bake about 25 minutes, until the coconut is golden brown. Let cool a bit, then cut while still warm. SO yummy! :)
