Does anyone have any good casserole recipes that don't have chunks of onion, peppers, or seafood in them? I have one for tator tot casserole that I really like...so I am looking for new casseroles all together.

I make an enchalada casserole sometimes....Basicly its precooked chicken or pork, what ever you have left over.. I cut up potatoes into chunks and cook them till there soft....drain them, add the shreaded chicken or pork..you can cube it if you get lazy :) add a bunch of motzerella cheese to it, green peppers from a can, they are diced, they addd a little heat...and add some green enchalada sauce to it..mix it up gently...then i layer corn tortillas in with the mixture and pour in a bunch of green sauce and add a ton of cheese on top...cook prob at 350 till bubbly and brown...you could make it with beef prob, and use the red enchalada sauce...I just like the green so i make it with chicken...you can also heat of the sauce and warm the tortillas in it..it makes them soft and if you want you can roll them instead of layer.....

My personal fave:
Chicken Noodle Casserole
4 ounces Noodles, broad, uncooked
3 cups Water; salted, boiling
1 can Cream of mushroom soup
1/3 cup Milk (or soy, if you have a milk allergy like me)
1 boneless, skinless chicken breast, cooked and cut into 1 inch squares
1 cup Peas, cooked
Buttered bread crumbs
Cook noodles in boiling salted water about 2 minutes. Cover and remove from heat, and let stand about 10 minutes.
Meanwhile, combine mushroom soup, milk, chicken, and peas. Rinse noodles with warm water and drain well. Fold noodles into chicken mixture; pour into a greased 1 quart casserole. Sprinkle with breadcrumbs and bake at 350 degrees about 30 minutes.
Serves 4

Put chicken in roasting pan and cook at 350 untill done.. Take all the meat off the bone and put in a pan mixed with the cream of chicken soup. Make your stuffing according to directions onbox but a little wetter. Pour stuffin on top of chicken and soup and bake till its a little crispy. I serve this with mashed tators and I never have leftovers...

Oooh.. that sounds very similar to what my mom used to make... however, I have an intense dislike of stuffing. :P I know.. how un-Thanksgivinglike of me. :)

TAMALE CASSEROLE
4 tsp canola oil
1 green bell pepper, seeded and chopped
2 red onions, chopped
1 jalapaeno pepper, seeded, deveined and chopped]
1 garlic clove, minced
1/2 pound ground turkey breast
1 cup no-salt-added tomato sauce
1 cup frozen corn kernels
3/4 tsp salt
1/2 to 1 tsp hot Mexican chili powder
2/3 c stone ground yellow cornmeal
1/3 c shedded reduced-fat Monteray Jack cheese
1. Heat oil in nonstick skillet. Saute peppers, onions and garlic until softened, about 5 minutes. Add turkey and cook, breaking apart with wooden sppon, until browned, about 5-8 minutes. Stir in the tomato sauce, corn, 1/2 tsp of sald and chili powder; bring to a boil. Reduce the heat and simmer, covered, stirring once or twice, until the sauce is thickened slightly, about 15 minutes. Transfer mixture to 8" square baking dish.
2. Preheat oven to 350. In a medium saucepan, bring 1 cup water and remaining 1/4 tsp salt to a boil. In medium bowl, whisk cornmeal into 1 cup water. Slowly pour the cornmeal into the boiling water in a then steady stream, stirring constantly with a wooden spoon until the mixture comes to a boil. Reduce the heat and cook, stirring constantly, until mixture thickens and begins to form large bubbles, about 5 minutes. Spread over the turkey so that it is completely covered. Bake 25 minutes, then sprinkle with cheese and bake until the cheese melts, about 5 more minutes. Let stand 10 minutes before serving.

FIESTA TACO CASSEROLE
1 pound ground chicken, turkey or turkey breast
1 can (15 oz) spicy chili beans in sauce, undrained (with baked beans in market)
1 cup salsa
2 cups coarsely broken tortilla chips (can be omitted)
1/2 cup sour cream
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar or Monteray Jack cheese (4 oz)
1. Heat oven to 350. Cook chicken in skillet over medium heat 8-10 minutes, stirring occasionally, until no longer pink; drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.
2. Place broken tortilla chips in ungreased 2 quart casserole (I usually omit the chips). Top with chicken mixture. Spread with sour cream. Sprinkle with green onions, tomato and cheese.
3. Bake uncovered 20-30 minutes or until hot and bubbly.
*Serve w/ tortilla chips, lettuce and salsa, if desired.

I tried this one today but with corn instead of peas (Brian hates peas) and it was a big hit. Thanks again for the great idea! :)
