View Full Version : Vegetarian Lunch Recipes

I am looking for some yummy recipes that my mum or I can make. I am after something to take to school for lunches. I'm a vegetarian so I wouldn't eat anything with meat or fish. Also there's no way that I could warm my lunch up at school as we are not allowed to use the microwaves and there's no place for us to boil water (for noodles etc.). Something easy would be best so it can be made in the morning or something that could be made beforehand and put into the fridge or freezer and then defrosted in the microwave.

I'm open to any suggestions. It doesn't matter what it is.. cake, pastie, with fruit veggies or whatever. as long as it has no meat or fish.

I'm pretty sick of eating sandwitches every day and would like some variety. Thank you

Salads are simple and you can get so creative with them. In fact, I just finished one! You could not only do salads with lettuce, you could pack a fruit salad with dip. Cottage cheese and hard boiled eggs are good along with them too.

I like this sandwich:

Take foccacia and cut it horozontally ( to make two thin slices ). Put sun-dried tomato pesto on one side, and basil pesto mixed with a little mayonaise on the other. Then add sliced tomato, basil leaves, crumbled feta cheese, and roasted red pepper. You can also use regular bread, substitue the feta cheese with cheddar, and grill it for a grilled cheese sandwich. =]

You could also make pasta salad. It tastes good cold.

And if you`re short on time, PB and J is a good fallback. =]

I have a wonderful eggless egg salad recipe if you're interested. Tastes great on wheat bread.

I also have one for a yummy cold couscous dish with plums and goat cheese.

One of my favorites is a mixture of peanut butter, cream cheese, and cayenne pepper spread on a pizza crust, topped with shredded carrots, cilantro, and red peppers.

Let me know if you're interested in any of these recipes, and I'll find them for you.
