LOL, it's not for me. My sister has to follow this diet for a few weeks, to get her health back on track. Doesn't sound so easy does it?
She can have rice, oats, vegetables, eggs, some fruit, beans, nuts, seeds. She can have some lean meats, but she is a vegetarian, so that is not an option. She also can't have vinegar.
LOL, so, any ideas? She's getting tired of rice and vegetables.

I say go with a yummy vegetarian stir fry! Fry up all the veggies with a killer sauce and serve over the rice. Or I also love fried rice.

Well, I'm gluten intolerant and am on a lifelong wheat-free diet. If you look in the health food sections of Fred Meyer or regular health food stores you can get some really excellent gluten-free baking mixes for biscuits, scones, cookies, brownies etc. Bob's Red Mill makes some good ones.
A couple of my favorite recipes:
Roast Potatoes with Rosemary and Garlic
1.25 lbs potatoes
6 tbsp olive oil
salt and pepper to taste
2 tbsp rosemary leaves, chopped
2 cloves garlic, peeled and chopped
preheat oven to 425 F. Peel potatoes and cut them into 3/4 inch cubes. Place in a large saucepan with salted water and parboil for 5 minutes, drain.
Pour the oil into a large roasting pan on and heat it on top of the stove. Add the potatoes and turn them, making sure they get coated well with oil. Season with salt and fresh ground black pepper. Sprinkle rosemary and garlic over potatoes and place pan in top half of over for 30 mins until they are brown and crispy all over. Turn 2 or 3 times during cooking.
Mexican foods are a good option. Just make sure the tortillas have no wheat. If she can have cheese then cheese quesadillas are nice and satisfying. So are nachos with beans, green onions, salsa etc. The best is tomales though (mmm!). There are probably ways to make vegetarian tomales.

All I can say is fried rice baby. ;) Some good brown rice, and start throwing veggies (and egg) in until you get a good consistancy. Favor can come from soy sauce or natural spices.
Vegi kebabs are always good on the BBQ too...
There is also a whole host of soups to try. You may want to shoot Ronda an e-mail, she grew up vegitarian and has some interesting recipes. :)

I have made eggplant Lasagna where you use slices of eggplant instead of noodles...cook the eggplant first either in a frying pan with a little bit of extra virgin olive oil or just put them in the oven in a pan till tender. the first layer i put tomatoe sauce on the eggplant and some grilled veggies the second layer was pureed kidney beans (for protien) and i topped it off with soy cheese it was quite delicious...and for those who can have some dairy you can add a layer of lowfat cottage cheese or look for a soy substitute! nothing wrong with a good ol fashioned omlett too using soy cheese or rice cheese of course. oh and blended smoothies ...a couple ice cubes fruit a little vanilla extract and a tiny bit of water (or vanilla soy milk)...sooooo good! veggie pita pizzas are good too she could use white bread pitas top with veggies like zuchini , portebello mushroom...spinach and soy cheese yum! and for a snack apples sliced with peanut butter is my fav. and fruit salad like netarine, apple, strawberries with salted sunflower seeds (without shells of course)....
i think thats all i got for now. and really its all about the soy!

If you're avoiding wheat be sure to avoid bread products, pastas and baked goods in general. All contain wheat of some variety. White bread, for example, is basically bleached & highly processed wheat.
I have a few friends who have Celiac Sprue disease so I've learned to be extra-careful when offering food for them. For some wheat-free ideas you may want to check out Gluten-Free Recipes (http://www.csaceliacs.org/recipes.php). Some of them are pretty tasty!
If your sister has a sweet tooth, check out your local health food store, co-op, Whole Foods Market or Trader Joe's. You can find wheat-free brownie and cake mixes that are really quite yummy.

Becareful of all those so called dairy free cheeses. All but like 2 of them contain casinate - which is dairy derived. I still have not figured out how/why they are allowed to call it dairy free when it has that in it. That would literally kill me...
