Easy Ratatouille
8 1 cup servings
This recipe would be considered acceptable for a lacto vegetarian as it contains dairy. Feel free to omit the cheese for a vegan meal. Change the dressing if desired; however, nutritional information will change.
1 large eggplant, cut into bite-sized cubes
1 medium red pepper, cut into ½" wide strips, then cut in half
1 medium onion, cut into ½" thick slices
1 medium zucchini, cut into ½" thick slices
1/4 cup Kraft CarbWell Lite Italian Salad Dressing
1 14.5 oz can low-sodium diced tomatoes, undrained
½ cup Kraft 2% Reduced Fat Mozzarella cheese
2 TB Kraft 100% Parmesan cheese
1) Mix eggplant, pepper, onion and zucchini with dressing. Cook in large skillet over medium-high heat for 6-8 minutes until veggies are tender and slightly browned.
2) Add tomatoes with can juices and cook for 15 minutes, stirring occasionally.
3) Top veggies with both cheeses. Cover skillet for an additional 5 minutes or until cheese has melted.
70 calories, 2.5g fat (1 sat), 220 mg sodium, 10g carbs, 4g fibre, 5g sugar and 5mg sodium.
