Inspired by Dustys_Mom's post about chicken and dumplings :)
My mother would make this as a quickie meal since the entire family enjoyed it. I've scaled it down to make 3 meals worth of food for me but it can easily be doubled/tripled to feed a larger family OR to freeze for later.
Creamed Chicken - 3 servings
1 10 3/4 oz can cream of chicken soup (or your favorite)
10 3/4 oz milk (use can from soup)
1 cup chicken, cooked and shredded (or one can of chicken)
1 cup frozen peas and carrots, run under hot water to seperate & thaw
1. Mix cream soup w/ 1 can full of milk in a 3 quart saucepan.
2. Add cooked or canned chicken and veggies.
3. Stir over medium heat until heated through. Serve over biscuits.
Biscuits
I'm embarrassed to say that I have never made real, homemade biscuits :S I use the drop biscuit recipe on the back of the Bisquick box or if I am in a pinch, I pop open a tin of Pillsbury biscuits. Like I said -- this is a quickie meal that can be made from ingredients most folks have on hand.
Notes: When I was a vegetarian, I would make my own batch of creamed mock-chicken (check out your health food store or the vegetarian section of your market) OR with extra veggies. I'd use a vegetarian cream soup in place of the chicken. It was quite good!
You can also make this with low fat ingredients.
