Someone please post a good, old fashioned chili recipe. Everything that I have found has been too "modern"-i just want a good chicken and beef chili recipe! It needs to be easy and have easy to find ingredients. I can't believe how chili has changed-you can make salmon chili now???

Ohhh, I would like to see one too. With red beans.
But I can't have any rice or anything like that in it. I don't eat rice, pasta, or bread.

1 lb dry kidney beans, soaked overnight according to the package directions
2 lbs ground beef or chopped beef. Single grind if you can get it.
2 cans of petite diced tomatoes with jalepenos
Commercial chili powder or homemade (the food network has a great chili powder recipe)
1 large sweet onion diced
1 green pepper diced
1 sweet red pepper diced

Cover the kidney beans with water (or beef stock for more flavor) and simmer until almost tender. This will take 2 or more hours, depending on how old the beans are. If you want quick, use a large can of Light Red Kidney Beans.

Brown the ground beef and put it in the pot with the beans. Leave the juices in the skillet. Saute the onion and peppers in the liquid until they begin to get tender but not browned. Dump everything in the chili pot. Simmer until the flavors begin to meld, adding water or broth if needed to keep it from getting too thick.

1/2 hour before you want to serve it, add commercial chili powder to taste, about 2 tablespoons. I use the Hot Mexican and add Cayenne pepper also.

For richer flavor a heaping tablespoon of cocoa powder can be added.

my dad makes a MEAN chili, but it is your standard regular kind.

i totally misread your thread! i thought it said you DIDNT want an old fashioned chili.

well, in that case, you'd LOVE my dads chili. i'll have to see if there is an actual "recipe" for it or not, he is the kinda guy that throws a whole bunch of stuff in until it tastes good.

but it is super awesome!

well let me know whatever he throws into it, chili is fairly easy to make except epicurious.com and martha stewart has it all complicated!

Chicken White Bean Chili
1 lb dry navy beans
1.5 lb boneless skinless chicken breasts
1 can petite diced tomatoes with jalepenos
1 qt chicken broth
1-2 tsp cumin
1 tbl minced garlic
1/2 tsp ground Red Pepper
1 tsp thyme
1 tsp oregano, ground
1 small sweet onion diced

Soak the beans overnight per package directions. Drain and cover with chicken broth, adding water to make enough liquid. In a skillet, saute onions until clear and add to bean pot. Add the tomatoes. Add chicken to the mixture and simmer until the chicken is tender. Break the chicken up into small chunks.

Add spices and adjust to taste. Commercial chili powder may be used instead of seasonings.

Ok, here is a rough estimate of what he does, i called him and he confirmed that he just throws junk in there, but somehow it always comes out tasting the same, here is the jist of the chili. keep in mind the porpotions im writing, is what he said, and a lot of times he uses more or less of the items.

1 large can of Brooks mild beans
1 large can of Brooks hot beans
1 can dark kidney beans
1 can light kidney beans
2 cans crushed/diced tomatoes
1/2 cup of ketchup
1/4 cup A1 steak sauce

2 pounds ground beef, fry up with chopped onions, green pepper, or whatever pepper you have and want

after the ground beef and onions and peppers are done, throw in big pot with everything else.

to thicken you can use cornstartch or flour and water

he also adds salt, pepper, onion salt, and a packet or 2 of some chili mix flavors.

he also will either throw a whole jalepeno into the chili while it is simmering, or if he wants it hotter, he'll chop up a few jalepenos instead of leaving them whole.

he also said sometimes he throws in another can of tomatoes.

who knows right? thats the problem with those kind of people who just put "a dash of this", a "pinch of this" and when we love the recipe, and want to make it for ourselves, we are crap out of luck!
