I know there are tons of different kinds of soup, but what is your fave soup? :) I clicked on brocolli and cheese and it went all the way to %100! Wondering why?

Okay, so what is your recipe? I am a failure at making soup (the few times I tried) so I stick with non-liquid meals, but I do like chicken noodle soup... I am willing to try again if the recipe is good :)

I have two absolute favorites (but I picked broccoli and cheese b/c both weren't listed). One is a soup I used to have ALL THE TIME when I lived in ND. Knefla (potato (LOVE potatoes) and dumplings). It has GOT to be a Midwest thing b/c no one else makes it or has heard of it. Corn and chicken chowder is my the other favorite. Chunky soup now has one!

 amy.. the dumplins part may be from your part.. but potato soup and cornbread is a southern thing too.. loveeeeeeeeee me some homemade tata soup..
equus, the soup is easy and makes alot.. yummmmyyyy
i cook mine in a crockpot.. allowing it to simmer through the day and ready when i want it..
carrots, (raw or canned/sliced)
celery, (raw sliced, or sometimes i use canned cream of celery soup)
chicken, (canned chunks of chicken, or your own)
chicken broth... (also ready made broth or broth off a chicken you cook)
egg noodles
seasoning
i pour about 4 cans of chicken broth in, add my carrots and celery, salt and pepper, add a diced onion.. then add my chicken..
let simmer for hour or so, add in cooked egg noodles and let it continue warming up.. its sooooooo good on a cold winter day..
you can adjust amounts and how you fix it, (crockpot or stovetop) to your liking.. but its basic and good...

I said brocolli and cheese- but I also love a good bowl of creamy tomato soup (made with milk instead of water) with some parmasan cheese!

This is the chicken noodle soup recipe I use. I got it out of one of my Tyler Florence cookbooks. It is a hit around here, and really easy to make.
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 medium carrots, cut diagonally into 1/2-inch-thick slices
2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
4 fresh thyme sprigs
1 bay leaf
2 quarts chicken stock
8 ounces dried wide egg noodles
1 1/2 cups shredded cooked chicken
Kosher salt and freshly ground black pepper
1 handful fresh flat-leaf parsley, finely chopped
Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken stock and bring the liquid to a boil. Add the noodles and simmer for 5 minutes until tender. Fold in the chicken, and continue to simmer for another couple of minutes to heat through; season with salt and pepper. Sprinkle with chopped parsley before serving.
