I thought I would share my fav soup. It's really easy to make, and it makes quite a bit (16 cups).
What you will need
2 leeks - sliced
1 onion - chopped
1 clove of garlic - minced
1 cup of lentils
1/4 cup of barley
1 bay leaf
9 cups of chicken broth
1 stalk of celery - chopped
1 carrot - chopped
1 19 ounce can of tomatoes - chopped with liquid
and a pinch of thyme
put leeks, onion and garlic with 3 tablespoons water in a bowl. Cook covered in the microwave on high for 3 minutes.
put into a soup pot. Stir in lentils, barley, bay leaf and broth
Bring to a boil, reduce heat and let simmer (covered) for 30 minutes stirring occasionally
Add the remaining ingredients, cover and let simmer, stirring occasionally for about an hour (or until lentils are tender). Remove the bay leaf.
