It looks like we are going to have A LOT of strawberries this year. Does anyone have any good recipes using strawberries or what they do with them beside eating them fresh :)

This is my favorite strawberry recipe---
trawberry Daquiri
6 cups fresh or frozen unsweetened strawberries (we freeze the strawberries to use later in the season also)
1 6-ounce container frozen limeade(not lemonaid) concentrate
3/4 cup light rum or unsweetened pineapple juice (for the non-alcoholics)
1 16-ounce bottle lemon-lime carbonated beverage(7-up, sprite, or no-name works), chilled
2 cups ice cubes
Fresh strawberries and mini umbrellas -to garnish the glasses (optional:lol: )
1. If using fresh strawberries, remove stems and caps. For frozen strawberries, thaw the berries after measuring; do not drain.
2. Place strawberries, half at a time, in a blender container or food processor bowl. Cover; blend or process until smooth. Transfer blended berries to a large pitcher. Stir in limeade concentrate and light rum or pineapple juice. Cover; chill until serving time.
3. Just before serving, stir in the lemon-lime carbonated beverage and the ice. If desired, garnish with whole berries.
Makes 8 to 12 servings.
Make-Ahead Tip: Combine blended berries with concentrate and rum or pineapple juice. Cover and chill up to 4 hours. Add carbonated beverage and ice just before serving.
Or this one is very good- and goes over well with the guests!!
Strawberry Lasaugna
16-oz cream cheese, softened
2 (3-oz) pkg. vanilla instant pudding
1/2 Cup powdered sugar
1 Cup milk
8 Cups mashed strawberries
1/4 Cup Kirsch
1 Cup granulated sugar
2 loaves pound cake
1 Cup whipping cream
Beat cream cheese, pudding mixes, powdered sugar and milk at high speed until smooth; set aside.
Combine mashed strawberries, kirsch and sugar in medium bowl; mix well. Remove 1 Cup and puree in blender or food processor; reserve and set aside.
Slice cake into 1/2-inch slices. Line a 9x13 pan or dish with cake slices.
Layer 1/3 of the cream cheese mixture and 1/3 of the strawberry mixture over top of cake slices.
Repeat layers, ending with strawberry mixture.
Swirl the remaining strawberry over top.
Chill 4 to 8 hours.
Chill, then beat whipping cream until stiff peaks form.
Cut the cake into 3-inch squares, top with whipped cream and the reserved strawberry puree.
and my nephew's Favorite of the strawberry recipes
Strawberry Fudge Balls
1 8 oz. package cream cheese, softened
1 6 oz. package semisweet chocolate morsels, melted
3/4 C. vanilla wafer crumbs
1/4 C. strawberry preserves (homemade-- I have the recipe if you need one)
1/2 C. almonds, toasted and finely chopped
Beat cream cheese at medium speed with an electric mixer until creamy. Add melted chocolate, beating until smooth. Stir in vanilla wafer crumbs and preserves; cover and chill 1 hour. Shape into 1-inch balls;
roll in chopped almonds, and chill.
Yield: 4 dozen.
Oh and BTW-- I have alot more if you need them!! We go strawberry picking at my brother in law's - Mothers farm every year-- so I always am making recipes with the left over strawberries- since she sends us home with so many:lol:

Those sound great!!!! Thanks for all the recipes! I will print them out and give them a try this year. We made jam a couple years ago, but we could only use so much jam!!! I know how to make a cake with the strawberries for topping, but that is about all. I will have to make my niece & nephew the strawberry fudge balls, I am sure they will love them!!

Yea the fudge balls are amazing-- although yopu use strawberry preserves instead of fresh strawberres-- I usually make my own preserves!! I have the recipe if you need it - although preserves are suppost to be kept jarred for a while before using-- I usually use the next day-- and it seems to work out just fine!!

Kirsch is a type of wine!! Its from Austria!! I usually buy the Schloss Kirsch-- its clear like white but has a very sweet cherry aroma and a wonderful cherry/cherry pit flavour but the Taste is very dry!
You can substitue in any wine really-- I just find it tastes the best with the Kirsch!!

LOL- they are good trust me!!-
and I have plenty more where they came from--I've got a whole book full of recipes-- mostly my mom's, grandma's and aunts recipes:p I just write them all down and add them to my big book!!
