I haven't had meatloaf in years and my mother just abandoned the family. I had asked her lately if she could tell me her recipe for it but she's long gone.
So...anyone have good meatload recipes? I've never made such a thing and was hoping to sometime within the next few days. Mmm...I'm dying for some meatloaf!

I really like the one on the back of the Lipton Onion Soup box (if it's still there).
I make meatloaf by the seat of my pants and it's always different but here's the basics:
2.5 lbs of ground beef (not the super lean stuff)
1 egg
fat handful of bread crumbs
a big squeeze of ketchup
an envelope of Lipton's Onion Soup mix
2 tbs water
Mix everything into the ground meat, pat into a loaf shape in a pan (I don't use a loaf pan but a lasagna pan) and bake at 325 til done.

oh my... what an awful thing to try and deal with... am sorry...
so on to the meatloaf... i LOVEEEEEE meatloaf, but never make it anymore.. lol.. long story short? i won't eat it without onions, and the hubby despises onions..
there are several variations to meatloaf, but i keep mine as plain and simple as possible..
i use a pound of ground beef, about 1/4 to 1/2 cup of plain bread crumbs, an egg, small can of tomato sauce, (sometimes i use tomato soup/no water added) and chopped onions.. i mix them together real good and press it into a 9 X 5 loaf pan..
bake at 350* for about an hour... when its the last 10 minutes of cooking? i spoon ketchup or tomato soup on top..

4-6 servings 1 Meatloaf
1 hour 40 minutes 25 mins prep
1 1/2 lbs ground beef
1 cup cracker crumbs
1 1/4 teaspoons salt
1/4 teaspoon pepper
1 large egg, beaten
1 medium onion, chopped
1/2 cup tomato sauce
3/4 cup ketchup
2 tablespoons firmly packed brown sugar
1 cup water
2 tablespoons mustard
2 tablespoons vinegar
Preheat oven 325 degrees.
In a large mixing bowl, combine ground beef, crumbs, salt, pepper, egg, onion and tomato sauce.
Mix lightly.
Shape into a loaf and place in a baking dish.
In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
Brush the loaf with this mixture and place in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.
Now, the only change I make is that I tend to heat my oven to 350 degrees, otherwise it just takes too long to bake.
My family loves it, and my youngest asks me to make it constantly!

I like to keep things simple & never have much time for prep work. I just use 2 lbs of hamburger, some crackers, a couple eggs & a big jar of salsa. We use garlic lovers, but whatever type you like would work. Everything is chopped up, has spices & it's sooo easy. Mix it all up & bake! My daughter & her friends love it!
