Hey guys! I was wondering if anyone knew some really good recipes that I could make. The problem is I know how to make tons of things, but being that it's just for me, I usually end up wasting a ton of food. So does anyone out there know good recipes that I could make that I could keep easily or are smaller proportioned?? ;)

I am a fan of leftovers, the ziplock bag, the freezer, and the microwave.

I lived on variations of the quesadilla and the omelette one summer. And fruit from the farmer's market.

I have taken to buying meat (chicken, beef, pork, occasional lamb) on sale, and portioning it out into 3-4oz pieces within a day or two fo buying it. I then wrap them in plastic wrap, and put 2-3 pieces in a ziplock freezer bag. I get frozen veggies at the store. Before I go to bed, I pull out a piece of meat, and stick it in the fridge. For dinner the next night, I panfry the meat that is now thawed, and steam the veggies (I have a steamer now, but I used to just put them in a pot with a tablespoon or two of water, and put the lid on, and wait for it to mostly boil away (check it so it doesn't burn before it's cooked). Add salt, optional herbs, optional butter). I usually do frozen corn, frozen green beans, fresh carrots (either baby carrot whole or sliced big carrots), sometimes broccholi or frozen peas, or other things that looked good last time I was at the store. Easy, takes maybe 10-20 min, one meal, and not too bad for me :)

Ramen + veggies (I like frozen peas and fresh carrots) = Wonderful
Cans of ravioli, chicken noodle soup, cream of potato, etc are nice at times.
Salsa and chips are good snacks
Omlettes (mmm eggs + green pepper + ham + cheese...oh yeah!)
They have little chickens at the store...just a little one for one person...you can take recipes for chicken and us it :) good stuff...my recipe for chicken somewhere on this board is wonderful...chicken and potatoes...oh yum yum.

In the frozen foods you can get dishes for one...they have a lot of asian dishes that are yummy and I usually pick up a bag of stuff for two people and split it...I just make half the bag one day and the other half another day...you just split whatever it says to add in half is all.
They have lots of different things in the frozen foods for just one person. Pot pies, sailsbury steak, macaroni and cheese--lots of stuff!
French toast is a nice treat for breaksfast.
You can also buy like a bag of frozen chicken strips and make them whenever you want. They are usually pretty good.
Personally, I love baked potatoes so I do the easy version of it. Instead of taking forever and baking it I just punch some holes in it and pop it into the microwave.
You can make baked spagetti for yourself probably...cook enough noodles for just you...get one can of pizza sauce, one package of pepperoni, and one of motzerella(okay, i can't spell...) cheese. Noodles, sauce, cheese...and pop in the oven. It's pretty good O.o and different
Salads for one.
Fruit salads for one.
Hamburgers/cheeseburgers/hotdogs
Rice dishes
There's tons of variety...go through your freezer section at the grocery stores for ideas even!

Tuna helper! I would make this all the time, but John hates tuna. I hate tacos, but he gets tacos some nights, lol.

You can make tomato salad with sliced tomatos, mozarella, basil, drizzled olive oil, salt, and pepper. I eat this a lot. It makes me feel healthy, it's light, quick, and a one-person meal. Buy tomatoes the size of what you would like in one serving so that you don't have to store partially-eaten ones.

I say invest in a food saver (I got one cheap on Ebay). Then you can make whole pans of things and save them for months. Super easy that way too. Just divide it up after it's cooked and food save them. I love mine. :)

ya like beans, and rice? I lived on that in college. one big pot would last me a week, then I'd make anew one, every Saturday.

Pot pies *$0.50* and ramen noodles or pasta make a great meal!

Macaroni is a staple.

Hot pockets are awesome and I eat them for lunch a lot

Get a bag of salad and extra veggies if you want like cucumbers and tomatoes and eat the salad with a baked potato

Enchiladas - get a packet of the sauce you have to mix, tortillas, and cheese and you have at least 8 enchiladas you can share or eat for lunches too.

hamburger helper is always awesome!

I'm sure I can think of healthier stuff but I'm getting hungry now! Time to eat!

I always bought the IQF skinless boneless chicken breasts, ate with cooked rice with mixed veggies,( peas carrots) and either just butter/ marg. or cream of mushroom soup on it simple fairly quick and good for you
