anyone have good recipies for oven or slow cooker.
we have recently made huge changes in our diet here and have found we are addicted to bison/buffalo, only i am having some problems with cook times and would love some cooking tips(other then slower/shorter then beef).
i'd love to try meatloaf or meatballs but am affraid both would end up very tough.

Good idea. I love bison too, and have been itching to buy some at the market (tho they only carry it at Whole Foods).

We use the ground bison as we would hamburger with out much change in flavor/cook time/temp etc... Bison is definitely better medium vs. well done. We cook until it "looks right". IE checking on it like every 5 minutes or so, and them more often as it looks more done.
Try A.1. Steak house marinage chicago on it, very yummy over the coals.
If you type buffalo or bison meat into google a bunch of links pop-up as to where you can buy it online and they have links to how to cook. I know one has a cook book you can buy.
I love bison/buffalo.
Hannafords and Shaws carries ground buffalo in the meat section prepackaged 1 lb.
One thing we noticed is because it is so lean when frying it up for hamburgers/meatballs etc... you need to add a little fat, like olive oil so it doesn't stick to the pan.
For really good flavor use some bacon grease, but if you are making changes to your diet for health reasons I would stick to the olive oil.

Have you tried buying a "roast" type piece of meat, and then cooking it in the slowcooker? Baste it with it's natural juices, then make a gravy out of the leftover juices. When it's cooked, pair it with baby potatoes. It's pretty much a perfect meal.

My in laws use buffalo the same way they would use hamburger. They love it!!!
I would imagine in a slow cooker, you'd cook it like you would a beef roast :)
Have you tried a place like http://www.allrecipes.com ?

I hear that buffalo privets is a delicacie on Fear factor! *lol sorry I so had to put that on here!* :rofl: I know they slow cook them! ;) :rofl: :rofl:

i've done a few roasts, having cook time issues tho, as even in the slow cooker to long = tough, i don't baste removing the lid messed with the cooking, best to rub herbs on it then put it on top of the potatoes and let it cook/
i find the ground bison works great in place of ground beef, even in hamberger helpers, haven't found many helpful recipies for the slow cooker tho.
did my first meatloaf last night, yummers.
i usually add a touch of oil to meatballs/meatloaf and found using the same amount as beef worked well, bacon grease is so much yummer to use tho, haven't had any bacon in awhile, i should try some bison bacon, maybe next week.
