Sunday is my nephews Birthday Party. I was asked by my sister to make his cousin a cake. She is only 5 I believe, and Diabetic, so needs a cake with a sugar supplement.

I've been looking at Splenda. seems like it will measure just like Sugar. It will be a small cake, just for her. Because of how her sugar is, she may not be able to eat regular cake, so this way she'll be able to have something.

I also need a frosting recipe, as from what I can see most sold in stores aren't sugar free.

I just want to find something that would taste decent for her. She's such a sweet little girl.


Anyone have any ideas?

Cake- Go look at the splenda site, they have great recipes. I've made this recipe and it is so rich you will not notice sugar missing.

Sugarless Chocolate Splenda Cake

Here's a little Choc. lo-fat cake to tide you chocoholics over the Holidays.


2 1/4 cups all-purpose flour (550 Ml)
1 cup (250 Ml) Splenda Granular sugar substitute
1/2 cup (125 Ml) unsweetened cocoa powder
1 1/2 tsp (7 ML) baking soda
1/2 tsp (2 Ml) salt
2 eggs
1 1/2 cups (375 Ml) sour milk** ** (combine 4 tsp (20 Ml.) vinegar with 1 1/2 cups (375 Ml. sweet milk)****
1/3 cup (75 Ml) vegetable oil
<LI>1/2 cup (125 Ml.) apricot jam, with no added sugar

Mix flour, Spenda Granular, cocoa, baking soda, and salt in large mixing bowl. Add eggs, milk, oil. Beat on Medium for 1 minute until smooth. Spread in 2 - 8 inch (20 cm) layer cake pans. Bake at 350° F (180°C) 20 - 25 minutes. Cool for 5 minutes. Remove from pans and cool. Spread one layer with jam. Top with second layer. Glaze.
GLAZE DIRECTIONS
Combine 1/4 cup (50 Ml) cocoa powder, 2 Tbsp Splenda (25 Ml) and 4 tsp (20 Ml) cornstarch in saucepan. Whisk in 1/2 cup (125 Ml) milk, then 1/4 cup (50 Ml) corn syrup and 1 tsp (5 Ml) vanilla. Stir to boiling, over medium heat. Simmer, stirring over low heat 1 minute, or until thick

Thank you! I'm just affraid of doing something wrong, and making the poor girl sick. If I use the splenda, it wouldn't hurt her, right? I'll find out if she preferes a white cake or a chocolate cake, and see what would work better for her.

im diabetic, and still eat sugar things. i mean, if for some reason the cake doesnt turn out, or you cant find a recipe you like, your not going to hurt the girl by letting her eat some regular cake. i mean, she shouldnt be pigging out on huge slices (not like i dont), or eating it every day, but i just wanted to let you know that she will be fine if she eats the regular cake. Another thing, i HATE splenda, it has a HORRIBLE aftertaste, and i have found it difficult to find things that taste really good that are sugar free/made with artificial sweetener. Also, there are some ingredients in artificial sweetener (I.E. Sweet N Low, for one) has Aspartame in it, and the Aspartame isnt very good for you. i dont know, it's up to you, but good luck!

Megan, it's not just the sugar. The flour is a starch, which elevates blood glucose.

Consider buying a sugar free angel food cake. Cut it in half about an inch from the top and scoop out a trench all the way around. Make up some sugar free pudding (chocolate is good but so is butterscotch and pistashio). Fill the trench with pudding and put the top back on. Frost and decorate it with sugar free whipped topping.

Thanks Nancy. I like the idea of the angel food cake!

The problem with her, is her sugar is pretty touchy. If it's high, she can't eat the cake... I would hate to see her being the only one who can't eat cake, if her sugar is high.

That sounds really good hedgemom! Or even angel food cake with strawberrys....That way, maybe she wont be able to eat the cake, but she can eat the strawberries...Just dont add sugar to the strawberrys. Just slice them and put them around the cake.....Make it decorative. Maybe put the sugar free cool whip on the cake like frosting and add some strawberry slices ontop of the cake too..If all else fails, she can eat the strawberrys and save the cake for later when her levels are down.

Going with the angel food cake theme...an old weight watchers recipe involves sugar free angel food cake. You just take the angel food cake mix and a can of any soda you'd like (in your case...something sugar free, but we usually make it with diet cherry soda, or dr. pepper). All you do is mix and bake as usual. I know it sounds absolutely disgusting, but it's fabulous! I like it better than regular cake. I made it for my friend and dad (didn't tell them it was made with just soda and mix) and they kept commenting on how moist it was...I finally broke down and told them the secret. ;-) Good luck with your cake.

I think it must be a personal preference thing with Splenda. I use it all the time and love it. Playing further off of HM's idea. Slice the top half of the cage [you need more room with this one], make your tunnel and fill it with raspberries in their juices. You could also use sugar free raspberry jelly but the real stuff tastes better. I'd still ice it with the icing recipe but flavor it with lemon. The icing has just a bit of a tang offset by the sweetness of the raspberry. It's yummy!
