View Full Version : In Need Of A Good Dairy Recipe
I need a few recipes that are really good and use atleast three different types of dairy products. Couild be three different types of cheese or whatever. Doesnt matter whether its desert, dinner, or anything I just need a recipe that meets the three dairy rule. any help would be greatly apreciated.

How about lasagna? Cottage cheese, ricotta cheese, and then shredded cheese......Or hmm........I dont know lol. But yeah, you could do lasagna. You could mix the cottage cheese with ricotta cheese...It makes good lasagna :)
That's a good idea, I've never doen a lasagna. I did do a really cool pasta dish where I made the noodles and infused them with lots of herbs, and then cooked up soem diced chicken, bell pepper, nmushrooms , and onions, smothered it in a rich creamy bechamel sauce and baked with parmesan and bread crumbs on top. That knocked the judges socks off!! I;ll search around for oem good lasagna recipes/

Grilled veggie lasagna. *died*
Brush the veggies (yellow squash, green squash, eggplant, mushrooms, sweet red pepper quarters) with olive oil that's been infused with garlic, oregano, basil and a bit of tarragon. Grill until slightly charred and tender. Set aside.
Boil a pound of lasagna noodles, rinse and set aside.
Make your favorite marinara (mine is a couple pounds peeled, seeded diced tomatoes, green peppers, onions, garlic, sauteed in olive oil with a cup of red wine added towards the end).
mix a lb of ricotta with 1 beaten egg, 1 cup mozzeralla cheese shredded and 1/3 cup parmasan cheese grated. Put some sauce in the bottom of the pan (just a small scoop) then a layer of noodles, a layer of veggies, a layer of cheese mix and some sauce. Repeat til it's all gone or the pan is full, ending with sauce. Put sliced mozzeralla cheese all over the top and bake 350 till hot bubbly and golden.
Yum.
It can be frozen before adding the last cheese and kept. *sigh*

Once again, Hedgemom comes through with a fabulous recipe :) I don't have a grill so I suppose using a grill pan OR roasting the veggies would be OK?
Are you taking boarders any time soon? I'm good at cage cleaning ;)

here are a few of my favs!!
3 cheese macaroni-(well I'm not sure if this one will work-- because tecnically there is 4 dairy items in it)
400g penne pasta or macaroni
2-3 tomatoes
40g unsalted butter
1 1/2 Tbsp cornflour
600ml reduced fat milk
75g cheddar cheese grated
75g mozzarella cheese grated
75g romano cheese grated
1/4 tsp ground black pepper
1/4 tsp white pepper
1/4 tsp cayenne pepper - optional
1/4 tsp nutmeg
1 clove garlic - optional
salt, sugar
1-2 Tbsp breadcrumbs
Directions:
Place penne in boiling water and cook until al dente (slightly chewy to the bite).
Slice tomatoes thinly and sprinkle with salt and sugar and allow to stand.
Sauce: Melt butter, add cornflour, stir for about 3-4 minutes. Add milk a little at a time, add cheese. Stir to get a smooth consistency. Add nutmeg, white pepper and cayenne and stir into the sauce.
Mix the penne and sauce together and pour into the dish.
Place the tomato slices on top with a sprinkling of breadcrumbs, black pepper and extra cheddar cheese.
Bake in a very hot oven or under the grill, long enough to brown the top and warm the tomatoes.

Three Cheese Appetizer Cheesecake Recipe
1 cup sesame crackers -- crushed
3 tablespoons butter -- melted
1 cup ricotta cheese
4 ounces feta cheese -- finely crumbled
8 ounces cream cheese -- softened
2 large eggs
1/2 cup roasted red peppers -- chopped
1/3 cup sour cream
2 tablespoons fresh basil -- chopped
1/4 teaspoon garlic powder
Directions:
Heat oven to 350F degrees. In medium bowl, combine crushed crackers and butter; mix well.
Press in bottom and 1 1/2 inches up sides of ungreased 9-inch springform pan. In large bowl, combine ricotta, feta and cream cheese; beat until creamy. Add eggs, one at a time, beating well after each addition. Stir in all remaining ingredients. Pour mixture into crust-lined pan.
Bake at 350F for 35 to 40 minutes or until center is just about set. Cool 30 minutes. Loosen edges with small metal spatula or knife. Cool 30 minutes, or until completely cooled. Refrigerate at least 4 hours before serving.
Carefully remove sides of pan; place base of pan and cheesecake on serving plate. Cut into thin wedges. Serve with assorted crackers. Store in refrigerator.
This recipe for Three Cheese Appetizer Cheesecake serves/makes 16.

My family's favorite-Spagetti Casserole.....
1 package noodles
1# ground beef
1 jar spagetti sauce
16 oz sour cream
1 package cream cheese softened
2 cups shredded cheese
Fry beef and add spagetti sauce while cooking noodles. In sep bowl combine cream cheese and sour cream.
In glass baking dish put single layer of cooked noodles. Top with cream cheese sour cream mix and then top with meat mix and top with shredded cheese.
Put into preheated oven(375) About 20 minutes till cheese melts

Back in my meat eating days, dreamy spaghetti was a hit around my house too. I used a cup of small curd cottage cheese in place of a cup of cheese. It's a cheap substitute for ricotta cheese.
